Almond Flour Biscuits (gluten-free)
These gluten-free biscuits continue to be one of our favourite family treats! They take about 5 minutes to prepare, are really forgiving with measurements, and the clean-up is pretty quick too.
- 2 ½ cups almond flour
- ¾ tsp baking powder
- ¾ tsp sea salt
- 2 eggs
- 1 tbsp honey (or more if you have a sweet tooth)
- 2 tbsp coconut oil (melted)
- 2 tbsp butter
- About 1/2 cup raisins (or dates, chopped walnuts, or chocolate chips)
Preheat oven to 350°F.
Mix dry ingredients. In a separate bowl, beat eggs and mix in honey, butter, and coconut oil. Add wet ingredients to flour mixture. Mix well to form a dough. Fold in raisins.
Spoon (or roll into balls and squish gently) onto cookie sheet lined with parchment paper. Cook for 15 to 19 minutes.
Makes about 10 biscuits.
